For the passion fruit sticks

50gr Passion fruit pulp

10gr sugar

0,5gr agar-agar

1 gelatin (2gr)

For the omelette

1 egg

25gr sugar

25gr chocolate coverture black 70%

2gr cocoa powder

For the green lettuce

1 lettuce

125gr sugar

20gr glucose



For the passion fruit sticks:

Bring to boil the pulp and the sugar. Add agar-agar and simmer for a few seconds. Remove from stove and add gelatin previously soaked in cold water. Cool down and cut into sticks.

For the omelette

Mix all ingredients properly. Make an omelet with the sticks inside. It has to be juicy.

For the green lettuce

Blend lettuce, add sugar and glucose. Boil it for a few minutes.

Finish and Presentation

On a dish put the omelette and on the side the lettuce sauce with some flowers.
