It's created from a fine blend of Criollo and Trinitario cocoa beans from Madagascar, hence its fruity dark overtones and exceptional flavour.

As a single-origin chocolate bar, with its 64% cocoa content, you'll find a small piece is very satisfying. A medium roast flavour profile with more acidity and less bitterness.

Valrhona are a Bean-to-Bar chocolatier, sourcing the cocoa directly from the plantation. True chocolate artisans (founded in 1922), their years of experience in creating exceptional gourmet chocolate and couvertures, is evident.

However, if you want even more fruit, then Valrhona's Manjari Orange, dark chocolate bar is for you.

The same luscious Madagascan cocoa hit, but with the addition of small nuggets of orange.

Available in chip (callet) form, Manjari couverture is quite possibly one of Valrhona's most popular cooking chocolates. Due to its rich, fruit flavour profile, it's ideal for using in chocolate decoration, as an ingredient for desserts and baking.

Currently available in a 3kg bag size only, the oval shaped callets are easy to work with, with their smooth texture and fluidity. They're pre-tempered, so ideal for when using the seeding method for your chocolate tempering.
