Ecl1pse - New Reduced Sugar, Milk Chocolate from Callebaut

Ecl1pse (yes that's the correct spelling) is a revolutionary milk chocolate couverture chips/callets/drops from Callebaut. A 51% cocoa content milk chocolate with only 1% added sugar (sucrose) and no artificial ingredients. Its darker, smoother and creamier than any other milk chocolate.

Ecl1pse has about twice the milk and cocoa content compared to regular milk chocolate, say Callebaut. The result is a darker, smoother and more intense milk chocolate.

Amazingly, it has only 1% added sugar, so you can mix & match with regular milk chocolate couvertures, to achieve substantial reductions in sugar levels (by up to 50%).

It's rich flavour profile shines when used as an ingredient in baking pastries, or when making chocolate mousse or ice cream. Of course, Ecl1pse can be used without adding to other milk chocolates, but particularly in commercial use, the cocoa intensity may take a little getting used to.
