Chocolarders 'Again' range was created to help tackle food waste and in this instance rescuing organic oak smoked figs destined for unnecessary food waste. Combined with a high than average 50% milk chocolate created from single origin cocoa from the Dominican Republic.
Loveday Distillery, neighbours to Chocolarder in Falmouth use delicious organic oak smoked figs to flavour their spiced rum.
They carefully source organic dried figs, before waiting for a dry day to smoke them with oak just up the road at their distillery. The figs are then soaked in the rum for at least 2 weeks. With sustainability in mind, Loveday got in touch with Chocolarder feeling it was such a shame to see these figs go to waste, Chocolarder jumped at the chance.
The first process for Chocolarder is to remove moisture and alcohol from the figs, leaving just the right amount of chew in the fruit. Then to gently dry the figs, and break them down before pairing them with 50% Milk Chocolate from Oko Caribe in the Dominican Republic.
