Could Ruby Chocolate be a 2019 Taste Trend?

When Callebaut introduced the World to Ruby Chocolate - the "fourth chocolate", great things were predicted, including citing Ruby Chocolate as one of the taste trends for 2019.

13 years development by Callebaut went into creating Ruby Chocolate Couverture (recipe RB1). Initially launched in Shanghai, it was nearly a year later before the UK got to experience Ruby Chocolate for themselves, with Chocolate Trading Co being one of the first online retailers to offer Ruby Chocolate, not only in Callebaut's familiar 10kg bulk bag size, but also especially decanted bags of 200g, 500g & 1kg bags, for customers who did not wish to buy kilo's at a time. Top pastry chefs have been encouraged to produce new, exciting desserts using the unique berry like flavours of the Ruby chocolate, and it's a flavour profile that seems to pair remarkably well.

When Chef's first started creating with Ruby Chocolate, they quickly noticed that the rules which apply to dark, milk or even white chocolate don't necessarily apply to Ruby. For example, they noticed that humid or too hot a working environment, could cause RB1 to change colour and taste profile.

They also noticed that Ruby RB1 was like no other chocolate, in the flavours it could successfully be paired with, which gives enormous scope for creating new dishes or re-inventing old recipes. Everything from Rose Champagne to Rosemary can be combined with Ruby Chocolate. Beers, Cheeses, Oils & Vinegars can all be combined with RB1. Great for creating unique chocolate truffles & soft ganache centres.

When creating Desserts, their advice is to use Ruby Chocolate as purely as possible, mixing it with only dried or crunchy ingredients.

For the bakers and cake decorators amongst you, Ruby Chocolate can be used with butter to make delicious, colourful butter cream or chocolate spreads. Using fat-based ingredients like butter prevents dilution of the colour or taste.
