This fine dark chocolate bar is produced from the very first organic and fair trade cocoa in Madagascar, and from the legendary Sambirano Valley. A range of fruity flavours with hints of citrus, red berries and a pleasing acidity.
Zotter produces this bar with cocoa beans from the COPROCASA Cooperative, a union of 170 small farms on the Sambirano Valley of Madagascar. The cocoa is grown in volcanic soil, thriving in the island's tropical and humid climate, and is a mixture of 20% Criollo, the world's finest cocoa bean, 60% Trinitario and 20% Forastero. An exquisite combination, which Zotter gently roast from bean to bar in Austria, then conche for a relatively short time in order to produce a very distinctive single origin, 75% chocolate.

I've tried other chocolate bars from other chocolate makers, made with cocoa from the Sambarino Valley region on Madagascar and this Zotter Labooko bar is definitely one of the best, with punchy cocoa content and plenty of fruit notes.
