Continuing from the success of the Blond chocolate, 'Dulcey', a world first created by Valrhona, comes the new Orelys chocolate couverture. Using Muscovado sugar, the Orelys has notes of biscuits, fudge, malt and delicate liquorice. A 35% cocoa content chocolate.
As with the Dulcey, it's not milk, dark or white (as it contains cocoa), but 'Blond' chocolate. Think of it as a sophisticated caramac.
Valrhona describe that it took four years of research to find the ingredient which gives Orelys Blond its rich flavour; Mauritian Muscovado sugar. To obtain this natural sugar, sugar cane is crushed, then pressed to extract the juice. The juice is heated, dried and finally ground down. Because of its natural molasses content, Muscovado sugar has a slightly brown colour which shows as flecks within this gourmet chocolate couverture.
