Michel Cluizel is one of the world's few, true 'bean to bar' chocolate makers technically classed as a 'Cacaofevier' - Someone who makes chocolate directly from the cocoa bean and not from pre-formed cocoa mass - commonly described as a 'Chocolatier'. Michel Cluizel of France, was the first to not include soya lecithin in their chocolate and only uses 100% pure cocoa butter, natural Bourbon vanilla and un-refined cane sugar. Michel Cluizel is not readily available on the high street due to the specialist nature and superior quality of the chocolate.
