Usage

Application: Ideal ingredient for chocolate confectionery, pastry, glacier for enrobing, ganache, mousses, creamy chocolate and dessert, ice cream, sorbets and any culinary application of chocolate.

Melting temperature: 50 - 55 degrees C

Crystallisation temperature: 28 degrees C

Indicated temperature of use: 31 - 32 degrees C
