A world first for Valrhona?
Valrhona claim to have created a new type of chocolate. Not milk, dark or white but 'Blond'...
This new chocolate bar, named 'Dulcey', is a 32% cocoa content chocolate with particularly sweet, biscuit, fudge and malted flavours, unlike any other chocolate. Also the oatmeal colour is quite unique.
We are informed this new type of chocolate was initially discovered by accident when a Frederic Bau, founder of the Valrhona cookery school, was preparing for a pastry event. White chocolate waiting to be melted had been forgotten and 10 hours later it had turned blond, a colour he had not seen before in chocolate, and taken on a whole new flavour profile of its own.
