Ancient Mayan culture provides the clue to Sheffield based, bean to bar chocolate maker, Bullion’s name.

It’s all too easy to let fine chocolate become more than a ‘consuming’ passion and that’s just what happened to a former Chef, who became so entranced with the process of making chocolate, he set up his own bean to bar chocolate making company in Sheffield.

Years of meticulous research later and Bullion; a name inspired by the Mayan culture, where cocoa was thought to be a commodity & currency more valuable than gold, has produced 3 outstanding single origin dark chocolate bars from their South-Yorkshire premises.

The chocolate making process starts with the very beans themselves, ethically sourced from smallholder farms, to ensure the unique flavours of that particular, cocoa grower, are showcased.

In doing so, Bullion hope to highlight the skill and dedication of the farmers themselves. It’s another feature, which has resulted in some unique flavours, within their award-winning chocolate bars.

Bullion said “By starting right at the source and working from the bean, we’re able to have complete control over the complex steps needed to make chocolate. Allowing our skilled makers to entice and showcase the distinct flavours of the beans from each single origin.”

Their chocolate bars never contain more than 4 ingredients, allowing the purity of the cocoa to come through each single-origin bar.

The cocoa beans they use are sourced from trusted supply chain partners and co-operatives, that drive maximum value to the cocoa growing communities. It’s a scheme that Bullion believe goes far beyond Fairtrade.

Not only does this ensure Bullion will have repeat crops of the best quality cocoa beans for their chocolate. But together, they believe they’re building a fairer and more sustainable supply chain, which will revolutionise their industry.

Bullion are currently working with 3 different cocoa origins: Haiti, Bolivia and Guatemala:

From Haiti, their No1 70% cocoa content, Acul Du Nord dark chocolate bar. Located in the picturesque foothills of the Massif de Nord mountain range, these beans are from an association of smallholder farmers, who together, manage 974 hectares of land.

From Bolivia, their No2 70% cocoa content Alto Beni dark chocolate bar. Grown deep in the Amazonian basin, a region with an incredible diversity of plants, animals and cultures. Situated at roughly 1500 feet above sea level.

And finally, from Guatemala, their No3 70% cocoa content Lanquin dark chocolate bar. Located in the north central region of Guatemala, a lush, green plateau about 4,500 feet above sea level. Usually shrouded in mist, this area is farmed by people of direct decedent to Mayans.

All of Bullion’s current chocolate bars are soya free, dairy free, wheat & gluten free, alcohol free & nut free. They’re suitable for Vegans & Vegetarians alike. Made from just Cocoa beans, Cocoa butter and Cane sugar, Bullion proudly claim that their ethical cocoa sourcing goes beyond normal Fairtrade chocolate practises.
