Jewelled with raspberries and bursting with flavour, this joyful bar of chocolate takes me back to my childhood, foraging in the hedgerows with berry stained fingers. Sublimely creamy, I make it in small batches in my factory in Devon, from just natural cocoa butter, raw cane sugar, milk and raspberries. El Blanco white chocolate and raspberries were simply born for each other.

I wasn't expecting the bar to be pink/purple in colour - much like the Callebaut Ruby chocolate colour in fact - but the creamy flavour leaves you in no doubt this is an exceptional white chocolate bar. I got a nutty hint to the caramel creaminess. The raspberries offset this sweetness perfectly, and a little piece goes a satisfyingly long way.
