"Rhubarb and Cream" does sounds odd but so spot on. A dark chocolate with a bit of everything and leaning towards acidic fruits than grassy, deeper flavours. Pralus I notice doesn't have the smoothest texture as say Valrhona but if you're going for taste and impact I recommend this (and pralus). As Pralus is a small artisan producer in france I guess the refinement is not as perfect as the larger French chocolate makes such as Michel Cluizel, Valrhona.
