François Pralus conches this chocolate to remove much of the extreme bitterness associated with a really dark chocolate. When I first tasted it, I had to keep checking the ingredients to see if there was a misunderstanding and it did actually contain sugar!
A high percentage of cocoa butter gives the bar a lovely, creamy, melting quality that is deeply satisfying. Because of the long conching, many of the high notes and sour, fruity notes are smoothed off, to give something that is nutty, smooth and bitter without any sourness.
I love it and always pop it on my Birthday and Christmas wish list as a little low carb, heart healthy cocoa treat. Worth the extra money. Yum!
