Description

Pralus have used a blend of Criollo, Trinitario and Forastero cocoa from Indonesia, Ghama and Ecuador to create this robust and bitter, single origin chocolate with a slight spicey note with acidity to the edge to balance.

Whilst a step over the edge for most tastes, this is a high cocoa, bitter dark chocolate lovers dream.

'Fortissima' in French and Italian meaning strong.

5Absolute perfection!

Beautiful, one of my personal favourites. Its slight waxiness becomes totally irrelevant set against the sensational flavour and its gorgeous texture. I actually don't think it's that bitter but then I love the natural bitterness of dark chocolate. It's bitter compared to what Valhrona or Cluizel produce but their MO seems to be to lessen the bitterness as to become nonexistent. Pralus for the win!

5Absolute perfection!

Yes this is a strong bar but it is very more-ish. The usual Pralus style we have come to know and love ie extremely well roasted beans, means that I am hooked from the start and ended up eating 100g all at once! I am partial to a Pralus!

3Worth a try

I new I shouldn't have chosen this one as I really bought it to see how bitter I could go - not this far. So really its not fair of me to slate it as its just too bitter for me and I later have found around 75% dark chocolate is my absolute top limit although that can vary, and is dependent on the cocoa origin and who's making it. Pralus do have so many way out flavour combos in their origin bars I have to say, which is amazing.

5Absolute perfection!

Really powerful chocolate bar, nice and bitter but not at all astringent for me. Pralus chocolate does have a roasted taste and I know from experience as a regular customer here that the bars origins do change flavour a little. Some are heavily roasted indeed.
